Here is another recipe for King Ranch Casserole. This is the most commonly used recipe (or similar to it)since it is so easy to make.
Quick 'n' Easy King Ranch Casserole
Ingredients:
Boil 2.5 pounds chicken (with cumin, onion, celery and garlic) then shred
10 corn tortillas
1 onion, chopped
1 bell pepper, seeds and stem removed & diced
2 cups grated cheddar cheese
1 can cream of mushroom soup
1 can cream of chicken soup
1 cup chicken broth
1 can Ro-Tel tomatoes
1 tsp. chili powder
Method:
1. Preheat oven to 350 degrees.
2. Combine the soups, broth, Ro-Tel tomatoes and chili powder & blend until smooth.
3. Place a layer of chicken in a greased casserole dish.
4. Add layers of tortillas, onion, bell peppers, cheese and sauce.
5. Repeat layers and top with cheese.
6. Bake uncovered for 30 - 40 minutes or until browned on top.

Shirley, It is one of our favorite casseroles. However I use canned chicken, and eliminated the corn tortillas and use a bag of Doritos instead. We like it better. Try is sometime!
King Ranch casserole...there's not much I love to eat more than that. I made some last month with turkey leftovers and that was good too. We always have to find a home for leftover turkey.

Hi Russel, I have never been to the King Ranch but my husband has told me a lot about it. I had friends in Houston that I have been out of touch with for years but recently I saw in the wedding announcements in the paper that their son married one of the Kleberg girls.
